Meme's Classic Pecan Pie

 Happy Tuesday guys!

 

So since the holiday season is upon us in full swing…gosh it got here fast didn’t it?! I wanted to share with you a recipe that is super easy to make and are guaranteed to have your guests coming back for seconds.

 

This recipe is my Meme’s Classic Pecan Pie. Growing up, I remember my brother & I helping her in the kitchen making all kinds of baked goods. Most vividly was her pecan pie. I swear she is the epitome of the word “Southern”. Everything she has ever cooked has been, in her words, so good it makes ya wanna touch yourself haha! she’s a nut :)

 

I have so many fond memories with her in the kitchen and I hope to share more of her recipes with you in the future. But to start you out I’m going to give you her simple pecan pie recipe.

I thought I would try my hand at a homemade pie crust which is really simple but it does take practice. You can try this pie crust recipe yourself but I would suggest getting a store bought crust to have on hand just in case your crust doesn’t turn out. 

 

From scratch Pie Crust:

 

2 cups of flour

 

 1/2 a stick of butter cut into small cubes and put directly into flour

 Use a pastry masher and cut butter into flour until it feels mealy.

 

You can use your hands if you don’t have a pastry masher.

 Make a cup of cold water adding ice cubes because you want your water to be really cold.

Slowly add the cold water a little at a time, stirring as you go, until it is mixed well. 

Should be easy to work with, not real wet.

Add some flour onto your counter and roll out thin into a circle.

 

This is where I messed up because I overworked the dough which caused my crust to be tough. This is why I say buy a store bought crust till you get the hang of making a crust homemade. It looked pretty though haha! 

 Spray a pie dish and add your pie crust to the dish. Cut the excess dough around the edges and flute edges with a fork and set aside to get your filling ready. 

 Pecan Filling:

 

1 cup of light corn syrup

 1 cup of sugar

 3 eggs beaten

 2 tbs of melted butter

 1 tsp. of vanilla extract

 Mix together

 Chop up 1 1/2 cups of pecans

Fold pecans into liquid mixture

 Pour your mixture into your AMAZING!!!…from scratch pie crust

 Looks pretty doesn’t it :) 

Make sure you preheat your oven at 350° 

 

Bake on center rack of over for 1 hr (If crust is over browning…cover edges with foil)

 

Cool for 2 hrs and store in ref.

 

Tip: Pie is done when center is 200°. Tap center of pie lightly, it should spring back when done. 

 Look at that. You’d never know the crust was tough would you haha! Luckily I also made one with the store bought crust so I was actually able to serve it to people haha! I’m not fretting though…I plan on mastering the art of homemade crust. 

Top with your favorite whipped cream or whatever you like and enjoy.

 

For me…I like it the simple old fashioned way with nothing on it. Mmmmmmmmm!
