For Pumpkin Sake Cheesecake

Raise of hands…who LOVES pumpkin flavored anything? TBH there are only certain things that I enjoy that are actually pumpkin flavored. This cheesecake is one of them. From the homemade crust to the soft, FALLicious filling, you’re going to want to eat the entire thing in one sitting. 

First things first, ingredients. When it comes to baking, much like my bed linens, I don’t not skimp on quality. For this recipe I get the best brands on certain things such as Honey Made graham crackers, Dominos sugar, Philadelphia cream cheese. Now for the butter I get Land O Lakes European style extra creamy butter. Makes the crust soo delicious. Trust me.

 

Mmmmmm!!! Good to the last bite. Let’s get to the recipe! 

Ingredients:

* 2 cups graham cracker crumbs 
* 2 tbs granulated sugar 
* 7 tbs melted butter
* 16 oz cream cheese softened 
* 1 cup brown sugar
* 3 eggs
* 15 ounce can pumpkin puree
* 1 tbs all purpose flour
* 1 tsp vanilla extract 
* 1 1/2 tsp pumpkin pie spice
* cooking spray 
* whipped cream 
 

Instructions:

 

1) Preheat oven to 350° F. Coat a 9” springform pan with cooking spray.
2) Place the graham cracker crumbs, granulated sugar, butter in a bowl; stir till combined.
3) Firmly press the graham cracker crumbs in the bottom and sides of prepared pan.
4) Put crust in the oven and bake for 8-10 minutes or until golden brown.
5) Place cream cheese and brown sugar in mixer bowl. Beat until completely smooth. 3-4 minutes.
6) Add eggs, one at a time, beating after each addition.
7) Add the pumpkin purée, flour, vanilla extract and pumpkin pie spice. Beat until just combined.
8) Pour the prepared mixture into the ready crust and smooth top with a spatula.
9) Bake for 50 minutes or until top is browned. Turn off the oven and leave in over for an additional 60 minute.
10) Run a thin spatula or knife around the edge of pan to loosen from sides, then place the cheesc in the fridg. Chill for at least 6 hours or up to 3 days. 
11) Decorate the top of your cheesecake with whipped cream and whatever you like. I just sprinkled cinnamon on top of mine for a simple presentatio. You can always toast up some pecans or walnuts and drizzle chocolate and caramel over it for a more decadent treat.

There ya have it guys! its A pretty simple easy recipe which makes it great to prepare ahead of time for guests coming over for those Fall get togethers.
