Every morning Cameron and I wake up at 5:00am and hit the gym. Trust me, I know what you’re thinking. I NEVER used to be a morning person and neither did he but it’s something that we vowed a few months ago to start doing. Mainly because we both would get home from work and it would be around 6:30pm before we even headed to the gym so by the time we got back it was already time to shower and pretty much head to bed and we hadn’t even had dinner yet. All that to say we started going to the gym in the mornings to allow for more “us” time in the evenings.
So now that is the new norm for us. We wake up and head to the gym for a good workout and come home and eat breakfast before getting our day started. When we workout hard we want a good hearty breakfast that’s not only healthy but that tastes good too. This recipe is one of our go to recipes because it’s super easy and it tides us over till lunch which is very important. Especially when you have people you work with brining in desserts galore and want to scarf everything down. haha!
Here is a quick and easy recipe for a breakfast power bowl that will fill your tummy with complex carbs, protein and lots of fiber.

INGREDIENTS
(Yields 2 servings)
Quinoa
1/2 uncooked quinoa
1 cup water
Pinch of salt
1 tsp ground cinnamon
1/4 tsp nutmeg
1/8 tsp ground ginger
2 tbs heavy cream
Apples
1 tsp butter or coconut oil
1 apple peeled and diced
2 tsp maple syrup
1/4 cup chopped pecans
Yogurt
1 cup plain greek yogurt
1/4 tsp ground cinnamon
2 tsp maple syrup
INSTRUCTIONS
1. In a small saucepan, bring the quinoa, salt and water to a boil. Once the water starts boiling cover with a lid and reduce to medium heat. Cook for 12-15 minutes to allow quinoa to cook. If there is excess liquid you can drain. Add in the cinnamon, nutmeg, ginger, maple syrup and heavy cream. Stir together then remove from heat and let it steam, covered for about 5-10 min.
2. While your quinoa is steaming together those delicious ingredients go ahead and add the butter or coconut oil to a saucepan and heat over medium-high heat. Add the diced apple, maple syrup and cinnamon. Stir together and cook until the apples are tender, about 5 min. I added my chopped pecans to the apples to cook as well because I love warm, toasted pecans in my power bowl. You can just chop and top at the end if you prefer.
3. While the apples cook, whisk together your yogurt mixture with the cinnamon and maple syrup.
4. Top the bowls with quinoa, then your yogurt mixture followed by your cooked apples and chopped pecans.
There you have it. A power bowl to get you going in the morning and all under 15 min. Now that’s something I can get used to.
