Ingredients:
* 2 cups flour
* 2 1/2 teaspoons baking powder
* 1 teaspoons baking soda
* 1/2 teaspoon salt
* 1/4 cup vegan butter (I like Earth Balance)
* 3/4 cup cold soy or almond milk
* 1 teaspoon apple cider vinegar
Mix milk and vinegar. Set aside to curdle. (This combo gives the biscuits the buttermilk taste)
Mix all the dry ingredients in a bowl.
cut in butter using a fork or a potato masher until you have a course mixture.
Add the milk/vinegar mixture and stir until dough begins to form. Form dough into a ball and refrigerate for 20-30 minutes. (This step can be skipped if you are short on time)
Lay out dough onto a floured counter top and knead for 1-2 minutes or until dough is smooth. Add more flour as needed if the dough is too sticky.
Roll the dough out to about 1/2 inch thickness. If you don’t have a biscuit cutter, you can always use a drinking glass and it will get the job done.
Place on un-greased cookie sheet. (I like to place on parchment paper b/c I literally have an obsession with parchment paper I don’t know why ha-ha!)
Mix 1 tablespoon of soy/almond milk with 1 tablespoon of oil (I mixed almond milk and butter) and brush on top of the biscuits. This will give the biscuits the golden brown goodness on top :)
Preheat your oven to 450 degrees and bake for 10-12 minutes. Serve hot.
Pull out of the oven and smear your favorite homemade jam or gravy on top and enjoy! I do have to say these biscuits were SOO good this morning.
